(If you're wondering why it looks like I have so much mixture, it's because I made 3 batches haha!)
So start off by preheating your oven to 180c or fan 170 and prepare 2 trays with grease proof paper.
Ingredients;
-120g softened butter
-100g dark brown sugar
-70g caster sugar
-1 beaten egg
-2 drops of vanilla extract
-160g plain white flour
-200g chocolate
-a pinch of salt
-a pinch of baking powder
Once you have collected and measured out all your ingredients, you want to beat the butter and both of the sugars with an electric whisk (or by hand) until it's light and creamy, then go ahead and add the eggs and vanilla extract. It should be a caramel colour at this point.
Then by hand, fold in the flour a bit at a time and add the salt and baking powder, it should now thicken up to a dough like texture. This is when you will want to add your chocolate chips, I personally prefer to break up a chocolate bar in to big chunks but it's up to you :)
Then simply make dough balls about the size of a golf ball and place about 8cm apart on your baking tray and flatten slightly with the back of a spoon. Try and make sure all the chocolate is covered so it doesn't burn!
Bake in the top of a preheated over for about 12-14 minutes and the most important thing is DONT BE PUT OFF IF THEYRE STILL GOOEY- THEY WILL HARDEN AS THEY COOL!
I can't stress this enough, when you bake cookies, they 'set' almost when you take them out of the oven so try not to over bake them!
So be warned, when you take them out, they make still look like and have the texture of dough, but this is normal and they harden after so don't panic or be put off :P
The dark brown sugar gives them a really rich, autumn flavour, almost toffee like! I use Tesco's own chocolate bars and break them into segments, I made a batch of each white, milk and dark chocolate and they were all delicious.
